And if I have one that's really hard for me? Do I get new one aswell?

Just abandon it then and wait again.
Also a tip - if one of the objectives of any quest is to greet another NPC then you may get more quests when "greeting"

This I don't know, but I think you will get it no matter what you are doing, after enough time has passed.

I've just started the game, can't even deal with ants or bats

If you have 0 quests, you will get a new quest after some time. This can be 5 minutes, 5 days, and possibly longer. It depends on the development of your character. You will not get whispers on the wind if you have any quests.
If you do get a new quest from whispers or communing with nature, don't expect it to be any easier or closer than the ones you've abandoned.
As pointed out, any wild animal is pretty easy. mouflon are about #3-4 in terms of easiest animals to hunt. (bats, fox, maybe badger). Either way, you just need to shoot it with a sling or bow. It might run, it might not. Therein would lie the difficulty.
If it's your only one left, yeah, abandon it. Don't abandon quests based on difficulty or distance unless you have several other quests you can do.
