What causes it? Do you have any idea?

No split that hampers move speed by preventing horse riding and slowing you to a crawl while it heals?

*tsks* jorb missed a good opportunity for realistic torment there.

you guys seem to expect me to have all this wool and a fields full of ancient winthrows- so in a sort of "what if i only have clay pits in my area" kinda scenario, is there any known cure for it? or do i have to grind some curios so i can find me a chamomile?

Anyone can access wool if they need it. Clover a sheep in a grassland and sheer them (I'm sure you have one within reasonable walking distance, for wounds it's required to have some in stock now if you can't access the fair to buy it). Beyond that, ancient windthrows... well the problem is there's some nasty woundss in game and it's literally the only way to heal some things (others like stitch patch only take too long if left alone). If nothing is mentioned in the description, windthrows are the only option currently.

man, I must have been pretty unlucky then- haven't gotten one to actually eat a clover from me yet, is this quality specific for the clovers or is it just rng based?

There's RNG based in their movement. The closer you are, the easier it is for them to take the clover without RNGing away.

I run at 3rd speed until I'm right beside them (you can hold a clover in your cursor and move with Alt+click on amber client) then clover them. They take it instantly every time if you're that close because they always move towards you initially about 2-3 tiles distance.
