It is definitely not linear. The times seem to be arbitrarily set rather than following a function. Unfortunately I haven't timed each stage so I can't give you the answer you're looking for.

I do'n give 100% guarantee on these values, but to drop from 100% to 0% of said Satiation:

Ravenous: 216 hours (if Vigilance is right)
Famished: 88 hours (my measurements)
Hungry: 20 hours (my measurements)
Content: dunno
Full: dunno
Stuffed: 1,27 hours (based on wiki)
Overstuffed: 0?2 hours (based on wiki)

So what happens if your hunger reaches 0? I assume slow HHP damage.

Yeah. There are two kinds of "hunger". One is your energy bar which is the "survival" kind of hunger. You're healing when it's high, and you're starving when it's low.

The hunger bar is the "stat gain" regulating hunger. There are only benefits to it being low - although as mentioned, you shouldn't AIM to have it low generally, since you're missing the opportunity for stat gains on the way. Think of the hunger bar as "rest experience" from WoW.
