You need 5 seeds or one fully grown version of that crop to plant. I read somewhere that someone got a ton of seeds and a carrot for example, while I only got two carrots, which is fine 2 carrots = 2 tiles, so the farm grew even a tiny amount, this means its random whether you get both or not, but if you do, you can always assume youll get one extra assuming its fully grown

if you harvest the carrots while they're seeding (covered in white blobs) then you usually get 10 seeds and a carrot, so you can replant 3

So its not good to harvest when they are fully grown?

Not better or worse, different.
In Legacy if we wanted to raise Q we did farm carrots 3 times a day, so the 2 hour difference (between getting the white blobs and the fully grown carrots) made a huge Q difference in the final outcome, also storage needs where different because we could save seeds in bags and carrots took each one one slot.
