Carrots will have seeds when they have white flowers on them. Otherwise all you get are carrots that I know of at this point.

I can't seem to plant a peapod. Do I need 5 of them, or is there some way to get the peas out?

They require a trellis to be planted.

Peas grow on a trellis. Build one and you can plant them there.
