Did you read the stickies? Did you look at the wiki? Did you filter the search by date? I know Sevenless covered it in his guide (stickied), it looks like the wiki needs an updated guide, and Google or other search engines are only as powerful as your skill at using them.

I sense a bit of rudeness in this comment but I'm going to ignore it.

I have read his tutorial, and all it says is to grab the animal and hook him up to the hitching post.
The cow stayed there for a good little while, then he despawned. We had a trough for him. He never turned into his tame form.

I'm not the one taming however; my friend is and I am relaying information.

Neither of us can really afford to take damage right now.

Every time I google I check the dates of the post. Notice how I say "Sorry for bringing up an ancient post" (edit: in other posts but not this one for some reason)

Animals in the taming process can despawn if they aren't being tamed during the windows they present. All I can suggest here is to keep trying. More than one person should be available to keep an eye on animals to wrangle them when they're ready to tame again.

If you're having problems taking damage, do as Sevenless suggested and get some basic armor and boost your combat skills a bit more.

On Google, you can filter the searches by date. In the list of searches (All, Images, Videos, etc) click the "Search tools" to get an extra bar. Click the "Any time" and pick a date range. "Last year" should be good for anything relating to the updates in Haven.
