I answered my own question in the end. The big difference is that they don't work like legacy bee hives. The speed up is much smaller than it was before. It used to do something like reduce growing time to 1/3 the unboosted speed. Now I'd say it's maybe reducing it to 2/3?

For short crops (carrots) you're still only going to get about one harvest a day assuming you're not an automaton. But for longer crops you should be able to shave off a day from the harvest cycle.

Question is, do multiple bee hives help accelerate or not (given the new patches etc.)

From what I've inferred reading here, if your crops have more than 144 growth cycles in a day, you need more than 1 hive. Even if you are close, you probably should have more. Carrots can grow 4 times in a day, so 144 growth cycles will cover 36 carrot crops.

The extra hives were to accomodate the number of tiles of flax (That's 200 tiles total). I wasn't sure how rapid the transfers were, so I overkilled it and did 50 tiles per hive.

Multiple overlapping hives shouldn't speed up growth, that was the bug they fixed lately. The actual acceleration of hives is pretty small compared to old haven, which is what lead to my confusion initially.
