I usually just purge nearby forests from pines and maples. Chopping requires relatively long time and energy so 3 logs is nice and they provide good amount of blocks (50-60 with metal axe?) and boards (20 with metal saw.)

All trees grow at the same rate currently it seems.

Aha, yes, a beech tree was the first one I chopped and the one that prompted the question - it just. kept. going! And now it turns out that sweetgum produces only 32 blocks, etc.

Asgaroth22, thank you for information about metal axes, metal production will not be happening yet but it's in the plan.

Teleskop and vatas, I've got a few pine trees around here but I'm not sure I've seen any maples close by; I'm still not properly familiar with the different terrain types and the trees that grow on them, but possibly there is not just local variation but regional as well? No shortage of beech though, so that's looking good.

Pines and Maples spawn in different types of biomes. If you have access to pines don't worry about maples and vise versa, they seem identical but I'm not 100% sure. At least board count with metal saw is identical.
