Bow hunting anything smaller than a bear is really easy if you know how to do it.
First, you wont need 2 players, you can do this on your own, secondly ALWAYS bring a flask of water with you when hunting.

There are 2 methods here....

Method 1. For none aggressive animals (those that you can walk up to and will ignore you until you attack them)

Firstly, turn the grid system on (I use amber client - CTRL + G) you will find it much easier to line up the shot. walk right up to the animal at point blank range. Wait until the animal stops moving and make sure you are right next to it, then take aim. (Most people say aim between the animals legs with the first click, I personally instead tend to aim at the centre of its body. Experiment and see what works best for you.) Wait until your shot power is in the green... if the animal moves, cancel the shot, and start again. When you have built up full(ish) power, then click the animal a second time to fire. The animal should either be killed now, or enter flee mode. If it enters flee mode, you can either chase it down and punch it to death, or if it is too quick to catch, make a note of which direction it is fleeing in and allow it to run off you mini map entirely. (Make sure you click the olive branch next to its portrait to 'peace' it) As soon as it leaves the mini map it should pretty soon stop running, and go back to being passive. Run in the direction the animal first ran in and when you find it again, start the process over.

This method assumes you have enough power in each shot to either kill the animal, or cause it to flee. If the animal is aggressive when you approach it, or after a single shot, it has enough HP that instead of entering flee mode, it stands and attacks you, then try method 2.

If you wonder why I told you to always bring water, it is so that you can replenish all your stamina before attacking an animal, so that if it does enter flee mode, you will have enough stamina that you can run after the animal and 'punch it out' or at least catch up to it quicker when it stops running, giving you less chance of loosing it.

Method 2. For aggressive animals, or those that require more than 1 arrow.

Again turn on the grid system. This will require either some patience or a little luck. You either want to find the animal you want to hunt near a cliff, or follow it at a distance until it wonders near a cliff. The cliff will need to be long enough (height doesn't matter) that the animal is unable to path find around it. When you are on the cliff, use the 'attack' icon (the sword) to click on the animal and draw it to the cliff. make sure you stand at least 1 tile back from the edge or else the animal can still attack you despite being on a different level to you. This will also work with being on the other side of a river. Just make sure the animal cant attack you if you have to swim, since if you get knocked out in deep water, your energy will continue to drain, and you will drown and die. (Cliffs are safer in this respect.)
When the animal is waiting at the base of the cliff/other side of the river but cant get to you, aim at it by clicking the shoot button on the icon of the animal in the corner of your screen. (This will 'auto aim' at the animal) wait until you have full shot power, then fire. If the animal does not now flee, take another shot. If it does flee, you can either jump down and chase it while punching (good method for boars, but DO NOT do this with bears) or same in method 1, 'peace it' wait until it stops running, and repeat from the start of method 2. (If you do this, do not 'attack' the animal with the sword icon the second time since it will flee straight away, instead manually aim at it from atop a cliff.)

If you're having trouble clicking bats, it's because the aiming reticle is absolutely dreadful and you'd be hard-pressed to prove that statement wrong. For some reason the active tile it clicks isn't the tile under the arrow, but somewhere below it - maybe halfway down the cursor. Clickthrough is common, missing due to misclick is common, the cursor is garbage.

if wearing no armor, make sure you have at least 30 agi to be confortable with the cooldowns when fighting a bat, or you'll end up having to get you defenses up rather quickly then you'r able to land a hit. Also if you don't know anything about melee, go for ants first!

you can click the sword on the icon on the minimap. less chance of missing 5 million times.
