I was safe with lower stats; I defeated my first mammoth with lower stats and didn't have much issues with it (didn't have my CTC back then; crafted it with hides from the mammoth).

But no, raising my AC would literally slow me down. I can "upgrade" to steel, but that has an AGI penalty, and giving up my lynx cape for a dhelm would do the same thing. And it wouldn't give me any advantage whatsoever; AC doesn't matter unless you get hit, and every hit I receive is already soaked by armor (though at the cost of wear).

What would you consider a 'safer' deck against animals?

It would, give up on the lynx cape and even a winged helmet would be enough. With 82 or 84 deflect, I don't remember exactly, you deflect all normal attacks, only IP attacks are left. Get a zig-zag and you will deflect all normal attacks without losing your defense, plus attacking quicker. Get a punch along with your sting to get it's defenses down. Keep take aim, keep either shield up or parry (just in case but meh not really useful unless low stats) and you'll get the mammoth down in no time. ;)

What animal would you guys suggest training melee fighting on? I have absolutely no experience with it and I really don't want to die trying.

If you want to melee hunt animals, remember: Always have defenses up when the animal has over 1 IP. When it has over 1 IP it hits, and it hits hard. you can get your armor scratched or if your armor sucks you can even get knocked out.
