I think there's a bit of RNG as to where exactly that rabbit appears when you drop it. Also, it sometimes just sit there not running from you. And if it does, it may have random speed (so you'll catch it back sooner than you'd want to), and it changes direction randomly when encounter an object... All in all, I wouldn't count on it as a reliable way to escape combat.
