Ants have armor penetration. They're slow enough to back off, reset openings, and hit a few more times. Also get a lot of yarrow. Instant heal for antacid burns.
Not sure about foxes, but I've been kiting bats to a cave entrance. Hit a few times, duck out and fix openings, duck back in before combat resets and hit a few more times... back and forth till combat ends. You can do the same with foxes and any other animal. Anything bigger than a fox might hit too hard without armor, though, and you need to be careful of big IP attacks, so letting the combat end may be necessary to get rid of any IP the animal stacked up. Openings take time to reset after combat, though, so re-engaging will be like picking up where you left off.
downside is you lose a lot of the LP the combat was worth, and possibly lose combat discoveries.
