If You want to have any chance against casual fighters, 5k into combat stats, if You want to be somewhat relevant, 10k stats in combat

For a crafter, there's hard to say but between 2k to 5k is far than enough in all or most cases.

Not really. You can get into that level in a month or two of work. It's just come down to how much You want to trade and how much effort You want to put into it.
