Each fish usually has 1-2 types of lure that it'll like to bite on (ending up on the hook) and usually one where it'll likely (and repeatedly) only eat the lure.
Choice of hook plays into this, a type of fish that might relieably bite on a certain lure using a bone hook can ignore it when used with a metal or chitin hook.

Make notes on what lure/hook/line you succeeded to catch what with - keep in mind that a certain fish type actually has to be where you try to catch it.

Good to know. I made a huge assortment and went out to 5 different cave waters I know of, none of them having a single fish node. When do they spawn/reset?

When you see jumping fish then there's a fish node (though you won't know the types you can catch there without trying), when you don't see anything jumping then there are no fish to catch (either currently or always). Fish nodes are static afaik, but I have no idea how fast they recover when depleted.

That's weird, because no one fishes at a few of these cave waters because they're in my mine. Also I knew about the no jumping thing, which is why I'm weirded out that there's none at any of the waters.

Possibly they don't have any fish. Looking at lakes on the surface you might notice that there also are places where no fish can be found.

Yeah but these spots had tons of fish yesterday so I dunno.
