I think (and it's probably very accurate assumption) that it's the best to answer yourself what credos you want for a certain character and make a list of all of these credos
then do the ones with the hardest quests first, regardless of the bonus the credo offers, so when your amount of quest increases you don't get overwhelmed by the hardest ones

I personally picked hunter first and the next one is fisherman, then Im going to get the ones necessary for strider and get it as my first major credo

Not always. And it's the amount of them what was the main reason for the suicide.

TBH, I'd probably abandon the 50 hops, peas, etc that I don't normally grow in those quantities... but most of the farming quests I've seen are all waiting, and 50 is light. I've heard of 200.

Yeah, and Murphy's law strikes hard. Usually the less common/needed the crop is the higher quantity of it is asked by the quest.

Perhaps also add the fact that every new credo you pursue adds 10 extra quests?

It's there:

In order to complete a Credo you need to complete 10 quests per Credo you already have, so 10 for the first Credo, 20 for the second, and 30 for the third, and so on
