I had 3 leashed Aurocsen. The 3 of them were correctly leashed to a hitching post and have been here for a few days... I'm not taming them because I can't beat Aurocsen yet, but I was holding them for later...
Now I just came home after some exploring and one of them simply disappeared.
Does animals disappear after some time if no Taming is attempted?

I don't know if they disappear after some time, but the reason could be simplier: Someone was just walking by and aggroed your auroch, which caused him to detach from its hitching post and pathfind to the attacker.

Yes.

Hemp has two harvestable stages. The first is with the large orange buds on it, and all you get are the hemp buds. These can be dried and smoked for an FEP bonus. The final stage gets you 1 hemp fiber and a base of 10 seeds. It's an either/or deal, not both.

It needs to become pregnant and give birth before you can milk it.

Once your stats get up beyond eating one or two food items to get a point, you'll want anything and everything you can to stretch your food.

It is possible someone walked by your village, aggro'd one and then left- which causes it to unleash, and thus despawn.
