I've seen lots of answers to this, but midnight is tough to understand. Is it midnight the start of the day, or the end. After watching, I found out it's midnight Sunday/Monday, guessing Central European Summer Time, which is around 8pm US Eastern Daylight time Sunday night.

Midnight means exactly the same everywhere. When the clock tolls midnight, it is hour 0 and the beginning of a new day. 24 hour clocks designate it as 0000. You have 11:59 Sunday, and when the clock turns midnight, it is now Monday. Time refills are at 0000 Monday UTC. If you live East Coast US or Canada, this would be at 8pm (2000) Sunday (daylight savings time, yo). Coordinated Universal Time does not recognize any changes in the clock for daylight savings, etc, other than calendar adjustments due to the variance in the way we keep time and a calendar due to the Earth's rotation and revolution period not being precisely 24 hours and 365 days.

I'm not sure if this has already been asked somewhere but I can't find any reference to it, I've missed a lot of forum stuff from the start really as I've been on and off so much, lol, but, is it still possible to destroy pclaim stakes after they have been inactive for a month as in legacy, or has that action been removed now?

Is there a way to tell how many taming points an animal in progress has? I've read about a yellow number but I just finished the first round with a mouflon and didn't see any. Is it temporary and I just missed them? The animal definitely yielded and I was able to leash and hitch him again.

Yeah, as soon as the animal yields a yellow number pops up over its head showing the progress from 0 to 100.
