some data:

water (10,30,30 - avg=23.3 - geo.avg=20.8 - quad.avg=25) = (0.61 sta/e or 1.64 e/sta).
water (51,10,15 - avg=25.3 - geo.avg=19.7 - quad.avg=20.5) = (0.65 sta/e or 1.54 e/sta) here you can see that only average quality matters for more effective water.

spring water (20) = (0.56 sta/e or 1.8 e/sta) seems the same as regular water.

cold tea (10,16,13 - avg=13 - geo.avg=12.8 - quad.avg=12.9) = (0.55 sta/e or 1.82 e/sta) recovers about the same as or slightly more stamina per energy than water. didn't look too much into this.
hot tea (||) = (1.17 sta/e or 0.85 e/sta) is the most energy efficient drink.

for reference: simply standing and waiting = (1 sta/e or 1 e/sta, at ~6sec/sta).

as for chairs:

for now they only give a static boost to feasting (different by type of chair, not quality).

How do Sketchbook pages work? Can you apply them on already crafted items and already built structures? I assume they can only be applied once, are consumed upon use, and it is not possible to dismantle the item/structure to recover the sketch?

Also, do tamed horses need to be hitched to a post, or is boxing them in with a fence sufficient even if the map unloads?

to my knowledge you cannot put them on already built structures and there is no way that i have discovered to get them back after using them.

Yes they have to be hitched to get the taming process started. How taming basically works is you hitch it to get 15 "taming points" when you hitch it then when its ready you brawl with it until it "yields" you will know when it yields cause the circle next to its picture that normally has 2 swords and is red will go green. After it goes green you click the circle to also "yield" and then you re-hitch it again. do this 2 or 3 times and you will have a tame horse.

I mean an already tamed horse.

Then how does that work with putting them on, for example, a barter stand? It's not in the construction materials menu.

Once a horse is tamed, just keep it fenced like any other livestock.
