You're confusing Herbal Swill and Herbal Grind.

Herbal Swill is an elixir. It cannot be made unless you have an empty clay jar, and the result will be put into the jar. You can mouse-over it to see its effects.

Herbal Grind is an alchemical ingredient. It can be used as an ingredient to make elixirs. (Despite being 'herbal' it does not count as an Herb, only as a generic Alchemical Ingredient.)

Are attribute/ability bonuses from credos added to base stats, or are they like equipment bonuses?

added to base stats, including making further increases cost more lp

I was under the impression crops would return to normal in Spring but mine are still all fallow. Does this not happen or do I just have to wait a bit longer?

No, the crops don't recover. You have to harvest them and plant new ones.

Taming: is it cheesable? I've tried taming a horse, hitched it by the water, attacked it when it was ready, peaced immediately and tried to cheese with a boat. It didn't peace and ultimately I just killed it by doing 350 dmg (using only punches).

From the times I tried cheesing with melee I would too often end up with dead animals so I stopped. Cheesing with ranged, however, has only ever resulted in 1 dead horse. Hitch near water, aggro as normal when the time comes, peace and start shooting bone arrows or slinging rocks.

It's totally cheesable. Our first animals were tamed just by sling. Then bows. Horse + Bow can tame you anything, if you don't deal too much damage. Takes some practice not to overshot it.

Now that Snekkjas are built in two parts (ship and sail), which part actually determines the quality (and thus the speed)? Is it just the ship, just the sail, or do both count for the quality?

Quality is determined by a ship without a sail.
