Does harvesting carrots at the seed stage influence the QL? I have 25 farming and these carrots still drop QL after 4 generations (or so it seems, I don't know if it's actually the case)

I've not noticed any quality difference in carrots between the different stages, but my carrots may not be high enough quality to tell yet with the built in random factors.

How many harvestable stages do carrots have? 2 or 3?

No one answered this yet and you probably already know the answer, but there are three harvestable stages. The first one give you one carrot, the second one carrot and seeds and the third one two carrots. In the second harvestable stage the carrots have some white bumps on them.

Harvesting on the second stage is probably the best idea, especially because quality tends to be the same for all crops of the same species you have planted near each other
