I don't think you can milk a mouflon, and probably wouldn't count, anyways, if you could... :(

good news is: they're the easiest animal to tame.

You can, but it cost you one already completed quest. Canceling the fist quest of a credo costs you the 10K LP to start the credo.

The hunter credo wants me to shoot a swan and they're super dangerous for me right now. not to mention rare.

I had 'defeat swan, roast cave fish' as second quest for fisher...
Putting an arrow into a swan is way easier than killing one - and at least somewhat related to a hunter credo.

Credo in progress is lost on death, AFAIK.

That's not a huge deal, with a study desk you almost always wake up with 10,000 lp. I really need to die before i end up dying on a boat due to "put an arrow in a beaver" at my 28 HHP

I don't think so. When you look at your char on your account page it lists only completed credos.

But I don't have the data to prove it and don't want to kill my char just for the science of that. :)
