So I made a parchment with mussel on it, my farmer/cook read it and get XP but cant still boil mussels, did I miss someting ?

You neded to find taproots with 3 explo (rather rare at that lvl).

Can anyone (any random passerby) open a roundpole gate on a village claim? Or does the "trespass" permission not include opening gates?

Trespass permissions include opening gates, containers, and entering buildings. The only way a random passerby can do this on a village claim is to grant that permission to the "white" group. (Note that this is only for villages, not personal claims.) Otherwise, a person needs criminal acts to do so and leaves scents.

I think I'm forgetting something else important about this. Maybe not. There were changes to this system with the last new world.
