The quality of my tame animal products from butchering (the meat, the intestines) is much, much lower quality than advertised on examining the animal and inspecting the corpse.

1. Domesticated animals use Farming as softcap instead of Survival, i believe.
2. Product quality is some percentage of the one shown when inspecting a farm animal: if inspection says "Meat quality: 80%" and your animal is 100 100 100 then meat will be 80 80 80.
3. Just as with stunted/not grown yet trees, when butchering adolescent animals (calves, piglets etc.) you get product quality lowered.

DEX stat has nothing to do with any farming activity (harvesting, planting, tending for animals etc.), so, yes, it is used only to determine outcome of recipes that has DEX as part of it's softcap.
