how do blood stern look like in haven and hearth 2? Since quest asks to pick it and what are exploration * perception requirements?

I'm not going to say I know what the needed numbers are, but if you've been given the quest, you should have enough to see it. Sorry, don't know more that. For the most part, the numbers are pretty close if not the same as legacy for foraging items.

I assume, it's somewhere between clover and mussels.

Tips on horse-caring? I got a horse as a gift and i'm wading through the forum for tips. Can i only feed him through a trough, what's the best way to keep him safe, etc

Build a fence to stable in. Livestock will eat the grass (if grass is present nearby) when they're hungry, but it is treated as q10 fodder. You need a trough for them to eat better quality food. A horse will wander off if you dismount. It may take time, or it'll make a beeline in some random direction.

Once I have successfully tamed an animal, do I have to leash it to a hitching post again (to prevent despawning)?
Or should it just be allowed to walk around in a fenced area with a food trough available?

Once 100% tamed, the animal no longer needs hitching post, no. Walking around as long as in food trough radius is fine . Just try not to breed too many animals in too tight of a space (like less than 5x5 tiles and 15animals) there have been instances where animals have had strange behaviour and died unexpectedly.

Decrease enemy minimum ranged damage against their perception
Having higher agility than your opponent decreases your attack cool-downs in close combat, and increases the opponents attack cool-downs by the same amount.
