From what i see OP-Knock does not create opening like other combat moves, in increases EXISTING part of the opening by 40%. It is really effective at pushing animals to near-100% opening. You punch few times, then 2-3 OP-knock and each of them is stronger than previous one (unlike regular attacks, which become weaker and weaker in terms of opening).
I was able to get 98% green on boar in just few punches + 3 OP-knocks.
TLDR:
OP-Knock does increase existing opening by 40%, NOT reduce protection (block) by 40% (like regular attacks).
And thus is not affected by UA, only by card count.
