You need "The Will to Power" and "Yeomanry" skills in order to claim land. Then you build a claim with some sticks, rocks, bones and a couple dreams. You can find more info at ringofbrodgar.com.

Would 24 strength, 24 agi, 22 UA, cuttthroat armor and a roundshield be good enough to tame a horse? Trying to not get beat up on my first try taming :roll:

No. A horse kicked the crap out of me at double your stats and bronze plate. Round shield doesn't do anything with the UA skill if I recall correctly. Also, horses are the hardest things to tame I believe.

At my old settlement, I found a Reek of Theft by our drying racks, and indeed a couple hides were missing. However, we didn't have a pclaim up. What's up with that? I thought property-crime scents were only left behind on claims (or in extreme cases like assault and murder)

Are you in a village? A village claim will produce scents. Other than that, that's weird.

Yes ( I think you can check on the wiki pages of each crop)
Trellis only for grapes, hops, pea cucumber and pepper

Nope, I toggled all the claim visuals (personal/village/realm) and nada. Maybe it's a bug?
