Biomes will eventually spread out by itself....or you can plant grass with any seeds you have simply right clicking it on the ground. (maybe shift + right click, don't remember exactly now)...also check your landscape sheet, under adventure. (maybe plant grass is there)

Plant grass is in the adventure landscape menu. Right clicking most seeds on the ground just plants them.

I've been trying to make other versions of cheese both in caves in my log houses and in the celler but I always get generic gouda all the time..

You are using mixed milk.
Use pure sheep or cow milk only.

Fat cuts are a crafting recipe that requires 3 meat. Rendered fat requires 3 fat cuts and a boiling kettle. Good luck.
