No, you are saying that he will get branch, bark and all stuff from trees with lower quality, which is not right. Only logs will be lower if you cut the tree.

Pretty sure the trees I've farmed this year have provided lower quality items before a certain level. After a certain growth point, replenishable items (seeds, branches, etc) do produce at full quality.

Just want to note it has been a few months since I messed with it, so may be recalling incorrectly, but I was using early growth quality as a predictor of finally quality.

Taking stuff from the trees dosn't decrease the quality of the trees, that part is certain.
About the items pickable I'll know more tomorrow when the experiment is ready.

preferably something farmable that gives multiple items per square harvested and is quick, like beetroots and carrots.

If you have room for a large field, pumpkins are nice because they give the most fodder per harvest per tile, so you don't have to spend as much time on filling your troughs.

Do the home animals (sheeps, cattles) need the hitching post at all? Or do only wild animals (mouflins, Aurochs) need it to prevent disappearing?

It does help to keep them in one place or at least organized.

Domesticated animals will not despawn period, only die (of starvation, slaughtered).

W7 there was an abandoned island area with hundreds if not thousands of sheep constantly breeding, but somehow not starving to death. I'm not sure if anyone has any screenshots or not. (jordancoles just dropped a ton of stuff from w7 in the "Legacy Haven" thread in the Announcements.)
