From my running tests it st far looks like items picked from growing trees are always given at final tree quality, irrelevant of where in the growth cycle they are.
At least for Mulberry with leafs and fruit - will know more for Apple, Cherry and Fir in a day or two.

Around 60 UA/60 AGI should be able to take on an auroch and win by punching the crap out of it, around 30 minimum if you block it in a palisade and cheese it.
Having a decent str level and some cutthroat knuckles will help.

Can't, horse stamina can only be restored naturally from it's food pool (which it can only replenish from a trough or grass tiles) or by hearth magic.
