Depends on how many you have to pick, if you can see them all (skills) and the amount of mudflats in your area.
There are worse quests (pick glimmer/bluebell/edelweiss, tame something).

no mudflats in an area, took me about 2 days of exploring. I'm amazed at how rare mudflats are, or maybe people settled over them.

They're just rare in some areas. Where they're at, the bramble seems to be relatively common.

Must have pulled acorns from 30 or so odd oak tree's to test if any of them were king's, the wiki info on them is pretty light, can anyone share some info about them please?

Unfortunately they seem to be a little rarer than other trees in the areas they are at and there is another credo quest in the lumberjack credo that requires you to cut x kings oak trees so they might progressively become an endangered species. I did for all the kings oaks in about 20 mini-grids when i did that quest...

Lumberjack should include tree planting quests (to be performed on unclaimed land) to offset the deforestation.
