If it's tamed, and can't run very far, it won't get lost/despawn. More likely will be someone riding off with it if anything does happen.

When I'm outside the village palisade but still in village territory, I can't do stuff like chop down trees without getting the message "this land belongs to VILLAGE". How come? Am I missing some permissions?

Are you a member of the village? Do you have a visitor flag if not? Are permissions for the village in general set so you can do this, or does the village rely on field cairns to manage permissions in different areas? If I were to guess, the village uses cairns to manage permissions in specific areas and generally keeps restrictive settings elsewhere.

I'm not. I do have the visitor debuff but I'm still able to do things inside village walls (maybe because I have some claimed land there). The village has no cairns.

How does a lawspeaker change permissions for the village?

In the kin list window, select Village from the bottom of the page, from there you can assign rights to the various colour groups and then assign the relevant colour to your villagers.

About Breeding... When choosing a bull, for exemple, should I look at his milking value, in order to get better milking cows from it, or only the breeding value matters?

milk quantity , milk quality , Q of the animal , breeding are the main ones for cow
breeding softcap ( or hardcap? not sure ) the Q of the baby

Quality of your milk will be : Q of animal * milk quality * farming credo (if you have it).
