do milling machines need space on all four sides or can i safely build it in a corner?

My village have it in corner and it seem to work fine.

For miner that's probably enough, but sooner or later on lower levels you'll have to fight more and more often and agi would come useful.

For smith it's more complicated, especially if you consider jewelry part of a smiths job...
