Also when you bring up the circle menu from rightclicking something you can press numbers 1-9 to select one of the options instead of clicking on them with the mouse.

Hold an item that fits a stockpile, and Shift + Right-Click the stockpile.

From what I'm reading (and has been confirmed by at least one player) is that you don't need to sleep in a lean-to. It knows who built it and offers minimal protection from theft. Any would be thief should need larceny to steal and thus leave scents.

So you could theoretically build a ton of leantos to store your stuff in until you get Yeomanry?

I can't speak to that. I just read the other in a thread earlier. it might only keep your last one as protected and the rest can be looted like the public property they are.

That is correct. You can use leantos to store as much as you want. Warning: if you die you lose the ability to access the leantos even if you inherit.
