Yes, as with everything you place: hold ctrl (or shift? I always forget what is doing which) when having the preview (before clicking to place it) and spin the mouse wheel.

Ctrl takes it off the grid.

Long lasting ones like enthroned toads, prisms, charged rods.

You need to put in those that you don't need to refill often.

I use cornucopia, sandcastles, leather balls and petrified seashells if I have to leave the game for awhile, and strange crystals are also good if you have any.

Check out the curio list on the wiki. Study time is included on the table. http://ringofbrodgar.com/wiki/Curiosity_Table

Can I use aurochs for prolonged period of time (for milk) without taming one?

I'm too weak to beat an auroch, but I've seen them fenced off in people's settlements and I wonder: won't they just despawn? Can I use more than one clover on an individual auroch?

AFAIK you get a bucket milk per clover.

I dont know if it's been patched/fixed (or if its an intended feature), but i'm pretty sure you can clover the same aurochs/mouflon multiple times as long as you wait 10-15 minutes inbetween attempts.
