How long are you supposed to turn it? It has been over a minute and it hasn't been roasted.

I think it may have something to with the red bar to the right in the window when you open the fireplace, which I think is heat, the more heat bar is filled the quicker it roasts, mine's full and roasting is pretty quick.

Only hunt them on the grassfields and similar places where stamina drain isn't as high, when you're close to it set your run to full sprint and you will catch them. Also if you chase them into a fox the fox will kill it.

How do I use a roasting spit?

add it to a stone fireplace, get the fire going, get a cleaned animal carcass (both rabbits and chickens have worked for me) pick it up from your inventory and right click with it on the roasting spit, then position yourself at the turning handle and turn the spit until it's been roasted. (don't select clean when you click on the handle, it will remove it)

Does it just take a long ass time? I'm roasting and the hourglass doesn't even look like it's going at all.

Yeah, timed it just now to just under 4 minutes, dang.
But you do get 3 cuts of meat instead of 1 by spitroasting.
