When to harvest

Is there any specific way as to know when a crop is in its last stage or do I have to figure it out as I go and wait a day without change or more before harvesting for the first time, taking note of the times taken?

Carrots and hemp will be the only ones with issues of "harvesting too early" that I know of. Nothing I've harvested so far have been harvestable at an earlier stage than "full grown"

You'll learn, I figure. Most crops aren't harvestable until the last stage.

What does hemp look like when ready? Its quite tall now but i dunno if its ready lol.

Bushier than that. If you can't harvest it it isn't done.

It has harvest option, just didn't know if it had stages.

How many harvestable stages do carrots have? 2 or 3?

Oh, in that case it is done and I am blind.
Yes, hemp has a stage before that with orange buds that can be harvested for purposes of breaking federal drug laws.
