Subject is the question; Which factor would be the most important one?
If you could pick 2 of the above factors, which one would you pick and why?

vitality, because it seems to matter the most for foods.

Atm the tiers of quality seem to roughly be Vit>Sub>Ess

Time will tell as we find more stuff though. Not all the quality mechanics are fully understood outside food/water.

Ess = energy penalty reduction, Sub = no effect, Vit = stam regen bonus

Of course, sub water used in cooking has utlity, but not in drinking water specifically. I did that testing myself, dunno where I originally mentioned it.
