How exactly does this work? I've read that it adds a stat but nothing really conclusive.

Right click it with animal corpse.

Setup the spit on a campfire and then pick up a cleaned rabbit, chicken, or bat corpse and right click them onto the spit. The animal will cook very slowly over time or you can use the turn command and cook it for like 2 minutes. The campfire must be lit of the meat won't cook. Spitroasting creates different and more meat. Instead of 1 cooked rabbit meat you'll get 3 roasted rabbit meat that gives 2 FEPs instead of 1 and more overall FEPs. I forget which two it gives but off the top of my head I think it's Agi and Con. Chicken gains charisma, making it awful. Bats produce 2 meat and give 3 FEPs: Int, Per, and Con(I think?).

You wont get any bones from animals you spit roast, so unless you need bone glue, bone hooks, etc. its better to spit roast them. It takes "time* to spit roast as opposed to cooking it directly.

Remember that variety gets you attributes faster by reducing the number of FEPs needed to level up. Best if you use a little of both instead of all of one, even if that roasted chicken does have that small chance for +CHA. Just make sure you don't eat any other CHA foods and you'll be fine.
