Do they change meat types when they are tamed? I understand that there's a difference in a free-roaming animal and a tamed animal in many ways, but I didn't think it would affect the meat FEPs.

I thought they could be used (boar/pork) interchangeably in recipes before. I don't need realism, just trying to understand the change.

Pork counted as boar, but not vica versa. It was a direct upgrade since it could be used to make Bierwurst. Since tamed animal qualities have no real cap, you can balance recipes of wild vs tamed meat a bit to account for that.
