wrought iron/steel, because reasons?

So wiki doesn't cover my question at all, what exactly is the difference? Why would I go the long way to make items out of wrought iron/ steel? Is there an actual bonus quality to the item if it's made of it, even if it's of the same quality as the rock you mined?

To begin with You can craft different items with wrought and steel, in most cases better ones.
There's no ql bonus but there's base stat bonus.

Some items will only accept wrought or only accept steel. Plate mail is an example of an item which can only be crafted out of steel.

I thought they gained quality through smelting skill/strength while making it into higher grade metals, was the only point I could see. You guys are saying that's not the case?

Also, is meele combat a viable option in comparison to unarmed? As in, if I'd have a full armor set with a weapon and a shield, and levelled only melee combat instead of melee and UA, would I be competetive or current meta is UA ftw?

They don't necessarily gain quality through the smithing process. Often times they lose quality.

Melee combat isn't viable because there are no melee combat maneuvers. You'd just instantly die.

Sneak my question in if you don't mind. Does steel crucible still can only hold 12 hours worth of fuel?

I've heard it's down to 8 hours now.
