I heard that demijohns are used to make wine now.

Sorry mate, I'm pretty behind on farming. That one tidbit I heard in passing is all I know.

vinegar is made after wine...

so you should first make wine, and then check how to make vinegar

i think you should just left wine in demijhon

Since nobody seems to know the answer directly, I'd say leave some wine in a demijohn, put some in a barrel. If one turns to vinegar and the other doesn't, we have the answer.

Do as suggested. Put some in the demijohn and see what happens and what you get. Nobody knows an answer to this yet. It's a new world and new mechanics and you have to be willing to experiments with things. Try mixing some of it with fresh juice and see what you get, etc.

To note, I'm pretty sure nobody has gotten any wine or vinegar yet as I just harvest my first grapes a few days ago, and I planted them a few days after server start. At best, someone just got their first batch of wine.
