Different wood types give different tar outputs. Pine is the best for producing tar.
You can have tar-sticks be the majority of your house's thatching material, but use an even variety of boughs to fill the rest of the required thatching.
e.g. 9 tar sticks, 5 elm boughs, 5 yew boughs, 5 fir boughs, 5 spruce boughs, and 5 alder boughs to complete a stonestead that results in a tar sticked roof.

Tar is primarily used to make and maintain torches which are sources of fire that can be held in your hand and used several times. They save energy, time, and headache. You can use them to instantly place a small fire but not light it, so I have no idea what the point of that is. They can also be used for a black color thatching if you're into that. =)
