When you plant a crop you can tell what quality you're going to harvest it at via the inspect tool (A S for hotkey). You will get RNG of -2 to +5 on each of the three stats. Now, due to how it's coded, if you individually click each tile when planting, there can be very tiny +/- 1's on the stats. If you harvest seeds due to the auto stack feature you're going to automatically round down to the worst stat and very quickly.
Moral of the story for the easy farmer:
A) Test plant, is the quality bad? Wait. Within 5 hours the stats will be fully randomized from what you initially got, if you plant sooner than that you'll get similar ish results. If you're a more casual player I honestly think you should just check back the next day.
B) Bulk plant by Right click seed/bucket of seeds. Only ever harvest an area of seeds that was planted in the same bulk action to avoid rounding issues.
C) Overplant for your needs. Farming stuff is a lot easier than last world, and all of the above means your crop generations are not going to be consistent. Build up a bit of storage space for extra crops to tide you over.
I'm not exactly a fan of some of the ramifications of this system unfortunately, even if I really immensely appreciate the goal of less clicking required.
