Beetroots / leaves. Or carrots. both grow super fast.

Also if you have time to spare, pumpkins give 40 seeds. 5 to replant and 35 for fodder. Since we aren't exactly competing qualities of fodder with animals this early in the world...

Most of us use carrots and beets. They grow rapidly and you can quickly increase their quality to meet the demands of your animals.

I don't have any vegetables to spare (starting a new farm) is there anything else that works good?

Not really, TBH. Having to manually forage random shit to feed your animals takes hours of time to accomplish what crops can do in minutes. (with proper growth time given) Maybe open up a thread on AfO asking for crops for trade or charity?

Seconding this. Clovers are really common and can act as fodder till you get your farm up and running.
