Because of the way armor works, the metagame is going to be everyone running around in full armor, which makes them untouchable by any attack except Chop (Yes you can break their armor in a few hits with unarmed, but chopping is a much more efficient way of dispatching armored opponents). Because of this the most important defense to use will be green (Chop is green). The fastest green defense is Quick Dodge and the one with most weight is Shield Block (unless you're using B12 of course). Feigned dodge is also good, because it can attack green defenses. Parry deserves a mention because of the fast CD. UA is needed for Punching (fast green attack to remove opponents defenses in preparation for a chop). That's for actual combat in the field. For sparring (no armor on) you have to defend against every color except yellow which has only bad attacks. Low blow and knock his teeth out are the best attacks after Chop, and they are blue and red respectively, so Yield ground is a good defense against them.

Edit: If you don't have armor, and want a relatively decent deck just for basic self defence, i would recommend Take Aim, Yield Ground, Quick Dodge, Punch and Chop. If you don't have a sword (get one dude) you can replace Chop with a card of your choice, Knock his teeth out, Feigned dodge, Left hook are examples.

So one should be using punch and not left hook?

Left hook is an okay attack but won't damage a person wearing armor, Punch is really good because it removes green defenses and sets up for a Chop onto your opponents hit points.
