How to kill badgers?

I shot a badger and he started running. I was faster so i started running too. Suddenly every bit of my stamina was instantly taken away. After following him a while, i went up to him to punch him out and suddenly all his health was up to full again and he gave me 2 Deep Cuts, a Fell Slash and a Knick Knack. They don't give that many wounds. How am i supposed to kill them if they run faster than walking speed and when i run all stamina is instantly taken away, and they completely regenerate all their health after a minute?

I also just found a similar problem with Mouflon. Whenever you pick up a Clover to give to it, it just runs away so you can't right-click it.

If you don't have a sword, you can melee them using UA until their health is low enough to kill them with a bowshot.

Pay attention to what terrain you are on and what terrain they will run to. If you are on a forest terrain, you won't be able to sprint and running will use up stamina quickly. If they run into water, you'll never catch them unless you corner them. Is it possible the badger that gave you the beat down was a different one from the one that ran away? Having a horse can negate terrain penalties, but you can't shoot arrows from the horse without risking hitting the horse, which will give you a bigger beat down than the badger.
