Are Granite and Feldspar materials that can be smelted into ores?

Nope. Just stones.

Okay thanks. I thought I read somewhere that boulders will give ore but I havent found any yet. Just flint and schist. Caves just coal, schist and granite. Does my strength have to be higher than 10 to mine ore out of walls? Or do they all have random hardness?

Also is there any way to remove the Stinging Gauze? I didnt realize it was going to take solong to heal :P my agility and strength are both down huge now :p

You can take a stone and make a stockpile out of it(right-click with the stone anywhere on the ground, and then left click somewhere with the stockpile that appears). If the stockpile's color is gray, it's just normal stone. If the stockpile is red/brown, it's ore. Here you have list of ores: http://ringofbrodgar.com/wiki/Ore

There are hardness nodes. I believe that minerals have a hardness multiplier in addition to nodes, some minerals are harder than others even when they are next to each other. And lower levels of mine increase in hardness.

Do you mean stinging poultice? You can't remove it before it heals your wound. And believe me, it's healing fast. Wait until you get wretched gore and have to suffer a month or two of -10 Perc, Agi and Charisma.
