How do I use mele combat?

Pretty simple,

Is my melee move deck hidden or do I have to discover a sword or something to get basic melee moves? Do I discover them by fighting animals?

The melee moves have to be discovered by fighting animals. You need the weapon or tool needed to use the move equipped in order to discover it.

Chop is unlocked by stone axes, B12s, and swords.
Sting is unlocked by spears and swords.
Cleave is unlocked by stone axes, B12s, and swords.
Storm of Swords is unlocked by swords.
Shield up is unlocked by shields.
Parry is unlocked by swords.

How do I get the image thing to build a shield or can I build one without a motif?

To acquire sketchbook page, forage swamps for "Rainbow pad" or buy one from store.

You can build shield without sketchbook page, interface just doesn't have indicator that its optional. It should be on devs' list.
