Take a dead, cleaned small animal carcass (if you butchered the cleaned chicken/rabbit/squirrel/bat into bones and raw meat you
cannot roast it on a spit) and right click on the spit with it. A pink body should appear on the spit, you can either wait for it to turn brown which takes a few hours or opt to turn it (right click the spit handle), which will take a few minutes of you actually being there turning it.
Either way once it's browned you have the option to carve it (which I presume requires a sharp tool), which gives you some spitroast meat. Note that if you spitroast an animal, you won't get any bones, so if you need the bones for bone glue, etc you're going to want to just butcher it and eat the regular meat.
