You might have better replies to this in The Moot or Inn. Up to you, as this is the best place for questions without trolling and BS answers, but a lot of those invested in that part of the game don't visit here often.

As for 1 - it is more interesting and open to tactic solutions if village support comes by horse/feet. They can do mistakes, or play it well. Attackers can also do some scouting. If help just magically pops up inside a brickwalled village - all these fun is reduced to "wait till we owerpower them tenfold. Open gate. Profit"
As for 2 - I can invent 2-3 ways to evacuate without charter stone. But all of them require some initial preparation and playtime investment. Which is good for the game, cause you plan something, you complete it in the game, you are satisfied. With charterstone you just see the ram outsade and teleport everything elsewhere. Dull and dumb.
As for 3 - I agree with you. Partly. I'm trying to say that it was more reason and fun before and less now. IMO instead of making the game more boring in the edngame it should be made more fun, no? There should be a way to make the life of the weak a bit safer while wars between strong more profitable, less online demanding and less predictable.
